Shepherd’s pie with kale, wax bean salad, and roasted root vegetables
We had leftover mashed potatoes from making pierogies the other night. We sauteed up some tempeh, mushrooms, onion, marsala, shoyu and spices, then topped the stew with the mashed potatoes and baked it in the oven.
